Mexican bowl of goodness

Ok so today I was going to make a big bowl of salad, I felt like something colourful and nourishing. But then….. I looked out side and it was bucketing down with rain.

So with a quick change of plans we have this Mexican bowl of goodness. Still really healthy. You can leave the corn chips out for a oil free meal too.

I love Mexican food, it is always so colourful and fresh, well at least when made Vegan style! Let me know what you think of this quick bowl idea. xx

I know it looks like there is a lot to this recipe, but I promise it is all easy and so worth it.
I would make this recipe in this order:
soak cashews
start rice
start corn
start beans
make salsa
make guacamole
make champagne cashew creammexican-1

CHAMPAGNE CASHEW CREAM – Blitz the below
1 cup soaked raw cashews – soak in hot water for up to 1 hr
¼ cup of the cashew soaking water,
healthy splash to ¼ cup of Champagne and salt to taste

RICE
2 cups brown rice – follow instructions on pack. I usually let sit with lid on for about 20 mins after 3/4 of the water has evaporated. It makes it a little fluffier

CORN – blacked on stove top
2 cobs of corn – husks removed
In a small dish combine 1 Tbl olive oil and some chilli flakes and then brush over corn
Blacken in a pan over stove top – this will take about 20 mins
Once cooked, slice into sections for serving

BLACK BEANS – Mix seasoning and toss through beans with diced tomatoes
Crush up 3 cloves of garlic
½ tbsp. turmeric
Tsp nutmeg
Tbsp. Paprika
Tbsp Cumin
Tsp of Cinnamon
Tsp of Onion Powder
Toss in a whole can drained and rinsed Black Beans and mix through Black Bean Spice mix.
Add ½ tin of diced tomatoes and heat through on the stove top.

SALSA
Roughly chop, dice and slice 400grms of cherry tomatoes
Chop up ¾ cup of purple onion
Dice up ½ avocado
Combine all in a bowl

GUACAMOLE – Blitz the below – add water in need
1 Avocado
1/2 red onion
1/4 cup nutritional yeast
salt and pepper

Serve by filling your bowl with some, rice then layering on beans, salsa, guacamole and champagne cashew cream. Add in some tortilla chips, a lime wedge and some fresh coriander.
I also topped with some vegan parmesan cheese.
