Crispy sweet potato fries with all the toppings

I don’t know about you, but I just love fully loaded fries, they are a fork only meal so make the perfect “on the lounge meal”.
The colours in the dish are beautiful as well so you could impress your friend with this dish at BBQs or dinner parties or pot lucks….

This dish is:

  • quick and easy
  • gluten free
  • cheap
  • healthy
  • can be made without oil
  • super tasty

Serves 2
Ingredients:
2 large sweet potatoes cut into chunky fries
4 Tbl Vegan parmesan “cheese
1 Tbl dried parsley
1/2 Tbl smoked paprika
1/2 Tbl oil or your choice

Toppings:
1 cup chopped cherry tomatoes
1 chopped avocado
2 springs chopped spring onion
1/2 cup chopped coriander
Tbl fresh chives
2 cups rocket
2 cups spinach
salt and pepper to taste
Chili flakes (optional)

Method:
Preheat oven to 190°C (375F).
Prepare your potatoes.
In a large bowl toss the sweet potato fries with the cheese, parsley, paprika and the oil (if you are using).
Bake for 40 mins, turning at the half way mark.
Prepare your toppings.
Once your potatoes are ready lay your rocket and spinach on your serving dish. Top the leaves with your fries and then with the avocado, tomatoes, onion, parsley, chives and season with salt,pepper and chili.

Enjoy this as a side dish or as the main event.
