Is there anything better then good old pumpkin soup? That was rhetorical of course….
I was over a friends house the other day and she was asking how to make creamy soup without the cream, the answer? Potato!
I do the quickest most simply pumpkin soup and I promise you will not miss the cream at all. You don’t even need to peel your veggies if you don’t want to.
This a healthy, no oil, almost wholefoods (stock cubes) recipe, that everyone will love.
If you do not have time to roast your pumpkin that is fine I will give you two options.
30min – 1hr to cook
Serves 4-6
Ingredients:
1 Kent pumpkin ( or a large butternut)
1-2 carrots – 2 if small like mine
1 extra large potato
1 brown onion
4 cups water – more to thin in need
2 veggie stock cubes – I use these
1 punch all spice (optional)
salt and pepper to taste – I only use pepper as the stock cube does the trick
Method:
Roasting option
Preheat oven to 200°C. Chop your pumpkin and place on lined baking tray.
Roast for 45 mins – flip half way.
Peel your onion and chop into large chunks. Wash you carrots and potato and chop into chunks as well.
Pop the onion, carrots, potato, water, stock and all spice into your large pot and let cook on medium heat until your pumpkin is ready.
When pumpkin is nicely cooked place all ingredients in your blender and blend until silky smooth. Taste and adjust as needed.
No roast option
Chop your pumpkin and remove skin. Peel your onion and chop into large chunks. Wash you carrots and potato and chop into chunks as well.
Pop the pumpkin, onion, carrots, potato, water, stock and all spice into your large pot and let cook on medium heat until your pumpkin is ready.
When pumpkin is nicely cooked place all ingredients in your blender and blend until silky smooth. Taste and adjust as needed.
I garnish with with some chilli flakes, pumpkin seeds, corriander and pepper. (optional)
Serve with some wholemeal grainy bread
